1. Quake2 style partial hands and arms, though the downside to this is the amount of skinning i'd have to do for each weapon arm.

2. full sets of arms and hands, though the downside to this is the rigging of each finger, and the heavy polycount

3. no arms, downside to this is a complete lack of immersion and floaty weapons! Sad

Not casting a vote on this because I think the real answer is "it depends on the weapon."  Some stuff (swords, spellcasting hands, etc) obviously need them, magic staves and all don't.  Just like the original really.

Stilgar's approach seems reasonable.  For the weapons where parts should be visible the Quake 2 approach would probably be best.
